

What is Cuban Food?
A truly global mix of cultures and flavors
As the first and last Spanish colony in the Caribbean, Cuban food is heavily influenced by Spanish cuisine. The Spaniards not only brought their culinary traditions, they also introduced cattle and pigs to Cuba. Many of the colonizers were from southern Spain; hence many dishes have roots in Andalucia, including the Canary Islands. Other influences to Cuban cuisine include indigenous Taino foods, African, and Caribbean cuisines. Geography and climate play their part too as tropical fruits and root vegetables are mainstays of the Cuban cookbook, as well as, seafood which is readily abundant on the island. China’s contribution is also significant as they were the first to bring in rice and it still remains one of the biggest staple foods, not just
of Cuba, but of all Latin America.


SOFRITO
“The SOUL of Cuban cuisine.”
Sofrito is the prelude to many dishes including soups, stews, beans, rice, meat, and seafood. At its essence, the traditional Cuban sofrito is composed of yellow onions, green bell peppers, and garlic sautéed in olive oil.

Meet Dayron Mazón
IT ALL BEGAN WITH OUR FOOD TRUCK
This adventure began with a food truck which then grew into a physical location which was our dream goal. The team consists of Dayron Mazon, the owner and his mother Magalys Grulla who cooks traditional and authentic home-cooked Cuban cuisine. They both immigrated from Havana, Cuba in 2010 and they are excited to introduce Cuban food and culture to San Diego.
